Shutdown Timer Classic is available in a portable version on the GitHub page, and as a UWP app on the Microsoft Store. When you double-click the shutdown shortcut, the timer will begin. Give a name to the Shortcut (for instance, Shutdown 1 Hour) and then click Finish. In the field for path, type shutdown s -t and then click Next.
I tested the program using multiple settings, including the Graceful option on the main screen of the application, when it wasn't enabled, unsaved test documents were indeed closed when the timer kicked in and killed all the other programs. Right-click the desktop, hover your mouse over New, and choose Shortcut from the menu on the side. I recommend setting one of the default settings, and that would be the Graceful mode (prevents the program from ending other processes). This doesn't happen with the Lock and Sleep modes. Shutdown Timer Classic will automatically close if you chose the lock option. You won't be able to close or cancel the timer without entering the password.
